Healthy Chapati (roti) Recipe

The tradition of chapatti making: a series of make chapatti ( Chapati ) Step By Step.

Step1: Place 300g of atta in a bowl, make a well in the centre and stir in the water a little at a time

Step 2: After 1 minute add the oil (optional) and work into a soft supple dough by hand. For a really healthy recipe just use water instead of oil.

Step 3: Knead for about 5 minutes. The more you knead the better the dough will be and the softer the chapattis. Shape the dough into a large ball, place in a bowl and cover this with a plate/cling firm. Put in the fridge and leave to stand for about 30 minutes.

Step 4: Knead again and divide into 5 equal pieces. Roll these balls of approximately 2-3 inches in diameter.

Step 5: Roll out each piece on a floured surface into a thin round circle.

Step 6: Lightly grease a tava or frying pan and place over a moderate heat. Toss the chapatti between both hands, transferring the chapatti from one hand to another in quick succession.

Step 7: Place the chapatti on the pan and cook until blisters appear.

Step 8: Turn and cook the other side. When the blisters appear again press with a fish slice/folded tea towel.

Step 9: Remove the chapatti from the pan and place on an open gas flame. The chapatti should rise to create a perfect phulka. Alternately press the sides of the chapatti with a folded tea towel whilst it is still on the tava. Pressing on areas that have already risen will force air into other parts of the chapatti ad make them rise as well.

Step 10: Remove from the flame. Enjoy the tradition of perfect chapattis with dals, pickles or your favourite curry!
